Quinoa Brussel Sprout Salad

  1. - 1 cup quinoa
  2. - 2 cups brussel sprouts
  3. - shallots
  4. - parsley
  5. - green onions
  6. - honey
  7. - olive oil
  8. - fresh lime
  9. - salt & pepper
  1. Rinse quinoa in water. Wash thoroughly and cook according to package.
  2. Wash brussel sprouts and peel the first layer and cut off the bottom stem. Slice the brussel sprouts into thin slices.
  3. Chop parsley and green onions
  4. Slice shallots and saute with olive oil
  5. Make Dressing: Olive oil, honey, salt, pepper, lime juice
  6. Mix everything together in a bowl and toss in dressing and serve.
  1. This salad is great even the next day or after the dressing has been added for a few hours.
  2. I like dressing the brussel sprouts and having it soak in a little before dressing everything else and serving.
